Tripe à la mode de Caen
Another must of Norman cuisine: tripe à la mode de Caen. Avoid this dish if you don’t like offal. This culinary preparation is made from parts of the stomach of a ruminant and a beef foot. You can taste it in many Norman restaurants. There is even a brotherhood dedicated to the tasting of tripe à la mode de Caen, called the Grand Ordre de la Tripière d’or.

Teurgoule is a Norman culinary speciality that can be called torgoule or tergoule. Teurgoule is a dessert made from sweetened rice pudding with cinnamon. The teurgoule is cooked over a very low heat for 5 hours in a dish specially designed for this dessert. You can accompany your teurgoule with cider for a 100% Norman dessert.
Accompany all your Norman dishes with a Normandy cider. This alcoholic beverage obtained from the fermentation of apple juice is no longer in need of introduction. Normandy is one of the two main regions in France that grows cider apples and can therefore produce this drink.
